This Caterace 150mm boning knife is designed for precise and efficient cutting, making it ideal for deboning meat, poultry, and fish. The high-carbon stainless steel blade (SUS420J2) is rust resistant and hardened to a Rockwell rating of 52–54, so it stays sharp and strong during regular use. The fine sharpening allows the blade to move cleanly through joints and connective tissue with less effort.
